- 2 3/4 cups all-purpose flour
- 1 1/2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a mixing bowl, whisk together the flour, cream of tartar, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter with granulated sugar and brown sugar until fluffy and light in color.
- Add the eggs and vanilla extract, mixing until well blended.
- Gradually incorporate the dry ingredients into the wet mixture until just combined. Don’t overmix!
- In another bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
- Spread half of the snickerdoodle batter into the greased pan, creating an even layer.
- Drop spoonfuls of the cream cheese mixture over the batter, followed by spoonfuls of the remaining snickerdoodle batter.
- Use a knife to swirl the cream cheese into the batter gently for a marbled effect.
- To finish, mix a little sugar with cinnamon in a small bowl and sprinkle this over the top.
- Bake for 25-30 minutes or until the edges are golden brown and a toothpick comes out clean from the center.
- Allow the bars to cool completely before slicing them into squares.
Notes
For a dairy-free option, substitute unsalted butter with coconut oil or cream cheese with Greek yogurt.
