Description

Delightful fall treat that combines rich apple cider with warm spices for a cozy dessert.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, ensuring each is well incorporated. Stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt in another bowl.
  5. Gradually add the dry mixture to the wet mixture, alternating with the apple cider, mixing until just combined.
  6. Fill the cupcake liners about two-thirds full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool before serving.

Notes

Store un-frosted cupcakes in an airtight container at room temperature for up to three days, or refrigerate for up to a week. They can also be frozen for up to three months.
