- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup apple cider
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, ensuring each is well incorporated. Stir in the vanilla extract.
- Whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt in another bowl.
- Gradually add the dry mixture to the wet mixture, alternating with the apple cider, mixing until just combined.
- Fill the cupcake liners about two-thirds full with batter.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool before serving.
Notes
Store un-frosted cupcakes in an airtight container at room temperature for up to three days, or refrigerate for up to a week. They can also be frozen for up to three months.
