Description

Indulgent yet fresh Chocolate Strawberry Tarts with a buttery crust, rich chocolate filling, and luscious strawberries.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 23 tablespoons cold water
  • 8 ounces semi-sweet chocolate, chopped
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 pint fresh strawberries, hulled and sliced
  • 2 tablespoons apricot jam, warmed (optional, for glaze)

Instructions

  1. Prepare the tart shells: In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold, cubed butter and mix until crumbly. Stir in the egg yolk, followed by the cold water, one tablespoon at a time, until the dough holds together. Chill for 30 minutes.
  2. Make the chocolate filling: Preheat your oven to 350°F (175°C). Roll out the chilled dough and press it into the tart pan. Bake for 15-20 minutes or until golden. While it cools, heat the heavy cream until just hot, and then pour it over the chopped chocolate. Stir until smooth. Mix in the vanilla extract.
  3. Add the strawberry topping: Once the tart shell is cooled, fill it with the chocolate ganache evenly. Arrange the sliced strawberries on top. If you want a shiny finish, brush the strawberries with warmed apricot jam.
  4. Serve: Cut into slices and serve them chilled or at room temperature. Enjoy the burst of flavors!
