- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 egg yolk
- 2–3 tablespoons cold water
- 8 ounces semi-sweet chocolate, chopped
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 pint fresh strawberries, hulled and sliced
- 2 tablespoons apricot jam, warmed (optional, for glaze)
Instructions
- Prepare the tart shells: In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold, cubed butter and mix until crumbly. Stir in the egg yolk, followed by the cold water, one tablespoon at a time, until the dough holds together. Chill for 30 minutes.
- Make the chocolate filling: Preheat your oven to 350°F (175°C). Roll out the chilled dough and press it into the tart pan. Bake for 15-20 minutes or until golden. While it cools, heat the heavy cream until just hot, and then pour it over the chopped chocolate. Stir until smooth. Mix in the vanilla extract.
- Add the strawberry topping: Once the tart shell is cooled, fill it with the chocolate ganache evenly. Arrange the sliced strawberries on top. If you want a shiny finish, brush the strawberries with warmed apricot jam.
- Serve: Cut into slices and serve them chilled or at room temperature. Enjoy the burst of flavors!
