Fudgy brownies that ooze rich chocolate flavor and are delightfully accented by a salted butterscotch sauce.

- 35 g Dutch processed cocoa (⅓ cup)
- ¼ teaspoon salt

- 100 g dark brown sugar (½ cup packed / 3.5 oz)
- 2 large eggs, beaten
- 1 teaspoon vanilla
- 113 g unsalted butter (½ cup / 1 stick / 4 oz)
- 50 g dark chocolate (70% cocoa) (1.8 oz)
- 100 g white granulated sugar (½ cup / 3.5 oz) for butterscotch sauce
- 100 g dark brown sugar (½ cup packed / 3.5 oz) for butterscotch sauce
- 2 tablespoons water for butterscotch sauce
- 1 tablespoon liquid glucose or light corn syrup for butterscotch sauce
- 85 g unsalted butter, chopped into cubes (3 oz / ¾ stick) for butterscotch sauce
- ⅓ cup thickened cream for butterscotch sauce
- 1 teaspoon sea salt flakes for butterscotch sauce
- 1 tablespoon vanilla extract for butterscotch sauce
- Extra sea salt flakes for decoration
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a baking dish.
- Whisk together flour, cocoa powder, baking powder, and salt in a bowl.
- Mix the white and brown sugars with the melted unsalted butter until smooth in another large bowl.
- Stir in the beaten eggs and vanilla extract until combined.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Fold in the finely chopped dark chocolate.
- Pour the brownie batter into the prepared dish and spread evenly.
- Bake for about 20-25 minutes or until a toothpick comes out with moist crumbs.
- In a medium saucepan, combine white sugar, brown sugar, and water over medium heat for the butterscotch sauce. Stir until the sugars dissolve.
- Bring the mixture to a gentle boil without stirring until it reaches a golden color.
- Remove from heat and carefully whisk in the butter and cream until smooth.
- Stir in the sea salt and vanilla extract until fully incorporated.
- Once the brownies have cooled slightly, pour the warm butterscotch sauce over them and sprinkle with extra sea salt flakes.
Notes
For a sweeter flavor, substitute dark chocolate with semi-sweet. Can use vegan butter for a plant-based version.
