Description

Delightful clusters combining rich chocolate, creamy caramel, and crunchy pecans, perfect for any occasion.


Ingredients

  • 2 cups pecan halves
  • 24 soft caramel candies (unwrapped)
  • 1 tablespoon heavy cream
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening
  • 1/4 teaspoon sea salt (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line a baking sheet with parchment paper and arrange the pecan halves into small clusters, ideally about three pecans per cluster.
  2. Combine the unwrapped caramels and heavy cream in a microwave-safe bowl. Heat in the microwave in 20-second increments, stirring until fully melted and smooth.
  3. Spoon about 1 teaspoon of the melted caramel onto each pecan cluster, allowing it to drip and cover the pecans. Let the caramel set for a few minutes.
  4. Mix together the chocolate chips and coconut oil in another microwave-safe bowl. Microwave in 20-second bursts, stirring until completely smooth, and stir in the vanilla extract.
  5. Drizzle or spoon the melted chocolate over each caramel-pecan cluster, ensuring it is well covered. Sprinkle lightly with sea salt if desired.
  6. Allow the clusters to set at room temperature or chill in the refrigerator until firm. Store in an airtight container.

Notes

Experiment with different types of chocolate or nuts for varied flavors and textures. These clusters freeze well; just layer with parchment paper between them.
