Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup peanut butter
  • Reese’s peanut butter cups, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Whisk together the flour, sugar, cocoa powder, baking soda, and salt until well blended.
  3. Add the softened butter, buttermilk, eggs, and vanilla extract to the dry ingredients. Mix until everything is combined but be careful not to overmix.
  4. Fold in the chopped Reese’s peanut butter cups to create pockets of peanut butter goodness in each cupcake.
  5. Fill each cupcake liner about two-thirds full with the batter.
  6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool completely before frosting with your favorite peanut butter frosting, if desired.
