Description

A delightful fusion of rich, fudgy brownies and ethereal chocolate mousse, perfect for any chocolate lover.


Ingredients

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 1/2 cups (350ml) heavy whipping cream, chilled
  • 8 oz (225g) semisweet chocolate, finely chopped
  • 3 tbsp (45ml) milk
  • 2 tbsp (25g) powdered sugar
  • 4 oz (115g) semisweet chocolate, finely chopped for ganache
  • 1/2 cup (120ml) heavy cream for ganache

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving overhang.
  2. Whisk together the melted butter, sugar, eggs, and vanilla until smooth.
  3. Sift in the cocoa powder, flour, salt, and baking powder. Gently fold until combined.
  4. Pour the batter into the prepared pan and bake for 20-25 minutes until a toothpick comes out with moist crumbs. Allow to cool completely in the pan.
  5. Warm the milk in a small saucepan, pour it over the chopped chocolate, and let it sit for 2 minutes before stirring until smooth. Allow to cool slightly.
  6. Whip the chilled cream with the powdered sugar until soft peaks form. Stir a spoonful into the chocolate, then gently fold in the rest.
  7. Spread the mousse over the cooled brownie base and chill for at least 2 hours to set.
  8. Prepare the ganache by heating the cream until simmering, pouring it over the remaining chopped chocolate, and letting it sit for 2-3 minutes before stirring until glossy.
  9. Pour the ganache over the chilled mousse, smooth the surface, and chill for 1 hour. Slice with a warm knife for clean edges.

Notes

Garnish with fresh berries or a sprinkle of cocoa powder for presentation.
