Description

Delicious muffins that combine the rich flavors of chocolate and coffee with a delightful crunch from toffee bits.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup toffee bits
  • 1/2 cup bittersweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Combine the flour, cocoa powder, baking powder, baking soda, and salt in a mixing bowl. Whisk together until evenly mixed.
  3. Whisk together the granulated sugar, brown sugar, melted butter, eggs, vanilla extract, and cooled coffee in another bowl until smooth.
  4. Gradually stir the dry ingredients into the wet mixture just until combined—don’t overmix!
  5. Fold in the toffee bits and bittersweet chocolate chips.
  6. Scoop the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake in your preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow cooling for a few minutes in the pan before transferring to a wire rack. Enjoy your delicious muffins!

Notes

For extra flavor, add a pinch of espresso powder to the batter. Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
