- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup brewed coffee, cooled
- 1/2 cup toffee bits
- 1/2 cup bittersweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- Combine the flour, cocoa powder, baking powder, baking soda, and salt in a mixing bowl. Whisk together until evenly mixed.
- Whisk together the granulated sugar, brown sugar, melted butter, eggs, vanilla extract, and cooled coffee in another bowl until smooth.
- Gradually stir the dry ingredients into the wet mixture just until combined—don’t overmix!
- Fold in the toffee bits and bittersweet chocolate chips.
- Scoop the batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Bake in your preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cooling for a few minutes in the pan before transferring to a wire rack. Enjoy your delicious muffins!
Notes
For extra flavor, add a pinch of espresso powder to the batter. Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
