A delightful twist on classic dessert favorites, blending rich cheesecake with chocolate chip cookies.

- 40 oz Refrigerated chocolate chip cookie dough
- 16 oz Cream cheese, softened
- 1 egg
- 1/4 cup Granulated sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon juice (optional)
Instructions
- Preheat your oven to 350 degrees F.
- Place your cookie dough in the freezer for a couple of hours to make it easier to slice.
- While the dough chills, let the cream cheese soften and set the egg out until it reaches room temperature.
- Line a 13×9-inch pan with parchment paper or non-stick foil for easy removal.
- Slice half of the chilled cookie dough into 1/4-inch thick slices and layer them evenly on the bottom of the prepared pan. Press the slices down gently to form a solid base.
- Bake the cookie crust in the preheated oven for 10 minutes.
- In the meantime, beat together the softened cream cheese, egg, sugar, and vanilla using an electric mixer on medium speed until smooth and creamy.
- Once the crust is out of the oven, carefully spread the cheesecake batter over it while it’s still warm.
- Slice the remaining cookie dough and layer it over the cheesecake mixture.
- Return the pan to the oven and bake for another 35 to 40 minutes until the top is lightly golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool before refrigerating them for a few hours. Serve chilled.
Notes
For a richer flavor, serve with whipped cream, ice cream, or drizzled chocolate syrup.
