Description

A delightful twist on classic dessert favorites, blending rich cheesecake with chocolate chip cookies.


Ingredients

Scale
  • 40 oz Refrigerated chocolate chip cookie dough
  • 16 oz Cream cheese, softened
  • 1 egg
  • 1/4 cup Granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Place your cookie dough in the freezer for a couple of hours to make it easier to slice.
  3. While the dough chills, let the cream cheese soften and set the egg out until it reaches room temperature.
  4. Line a 13×9-inch pan with parchment paper or non-stick foil for easy removal.
  5. Slice half of the chilled cookie dough into 1/4-inch thick slices and layer them evenly on the bottom of the prepared pan. Press the slices down gently to form a solid base.
  6. Bake the cookie crust in the preheated oven for 10 minutes.
  7. In the meantime, beat together the softened cream cheese, egg, sugar, and vanilla using an electric mixer on medium speed until smooth and creamy.
  8. Once the crust is out of the oven, carefully spread the cheesecake batter over it while it’s still warm.
  9. Slice the remaining cookie dough and layer it over the cheesecake mixture.
  10. Return the pan to the oven and bake for another 35 to 40 minutes until the top is lightly golden and a toothpick inserted in the center comes out clean.
  11. Allow the bars to cool before refrigerating them for a few hours. Serve chilled.

Notes

For a richer flavor, serve with whipped cream, ice cream, or drizzled chocolate syrup.
