Ingredients

- 1 pound chicken breast, diced
- 2 medium sweet potatoes, cubed
- 1 cup rice (white or brown)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (bell peppers, broccoli, carrots)
- Your favorite sauce (teriyaki, soy sauce, or a light dressing)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
- Cook the rice according to package instructions until fluffy.
- Season the diced chicken with salt and pepper and cook in a skillet over medium heat for 5-7 minutes until fully cooked.
- Add mixed vegetables to the skillet and sauté until tender.
- Assemble your bowl with layers of rice, chicken, roasted sweet potatoes, and veggies. Drizzle with sauce and serve.
Notes
Feel free to customize with different grains or veggies and try using pre-cooked rotisserie chicken for quicker assembly.
