- 2 Chicken breasts
- 8 Corn tortillas
- 1 Onion (finely chopped)
- 1/4 cup Fresh cilantro (chopped)
- 2 Limes (for squeezing)
- 2 tbsp Olive oil
- 2 cloves Garlic (minced)
- 1 tsp Ground cumin
- 1 tsp Chili powder
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- Marinate the chicken: Begin by combining olive oil, minced garlic, ground cumin, chili powder, salt, and pepper in a bowl. Add the chicken breasts and make sure they’re well-coated. Cover and let them marinate in the refrigerator for at least 30 minutes.
- Grill the chicken: Preheat your grill to medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.
- Warm the corn tortillas: Place the corn tortillas on the grill for about 30 seconds on each side, just until they’re warm and pliable.
- Slice the grilled chicken: Remove the chicken from the grill. Let it rest for a few minutes, then slice it into thin strips.
- Assemble the tacos: Place the sliced chicken into the warm corn tortillas.
- Add the toppings: Top each taco with chopped onion, cilantro, and a squeeze of fresh lime juice.

Notes
For an extra kick, add diced jalapeños to the marinade. Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
