Description

A comforting all-in-one meal featuring seasoned chicken, creamy mashed potatoes, and rich gravy.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups mashed potatoes (store-bought or homemade)
  • 1 cup corn kernels (canned or frozen)
  • 1 cup shredded cheddar cheese
  • 1 cup prepared gravy (chicken or brown)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a medium bowl, combine the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Toss until the chicken is well-coated.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 7-9 minutes. Once done, remove the chicken from the skillet and set aside.
  3. While the chicken cooks, heat the gravy in a medium saucepan according to package instructions or your homemade recipe. Keep it warm.
  4. If you’re using frozen corn, cook it as per package instructions. For canned corn, simply drain it and heat it in a small saucepan until warm.
  5. Prepare or reheat mashed potatoes until they’re smooth and hot.
  6. To assemble your bowls, start with a generous scoop of mashed potatoes at the bottom of each serving bowl.
  7. Top the mashed potatoes with cooked corn, followed by a portion of the seasoned chicken.
  8. Drizzle warm gravy over the chicken and potatoes, then sprinkle with shredded cheese.
  9. Finish with fresh parsley (if desired) and serve immediately.

Notes

Consider adding different spices or swapping chicken for turkey for an easy twist on the dish.
