- 1 ½ lbs boneless, skinless chicken breasts, sliced
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 medium yellow onion, sliced
- ½ tsp salt
- 1 tsp black pepper
- 1 ½ tbsp chili powder
- 3 tsp cumin
- 1 tsp brown sugar
- 3 cloves garlic, minced
- 5 cups milk
- 4 cups farfalle pasta
- 1 cup cheddar cheese
Instructions
- Cook the Chicken: Heat the butter in a large skillet over medium-high heat. Add the sliced chicken and cook for about 5–6 minutes, turning halfway through, until golden brown. Remove the chicken and set aside but keep the melted butter in the skillet.
- Sauté the Vegetables: In the same skillet, add the sliced bell peppers and onions. Sauté for about 5–6 minutes until the peppers are soft and the onions are translucent.
- Spice It Up: Return the chicken to the skillet. Sprinkle in the salt, black pepper, chili powder, cumin, brown sugar, and minced garlic. Stir well to coat all the ingredients.
- Add Pasta and Milk: Pour in the milk and add the farfalle pasta. Bring the mixture to a boil, then reduce the heat to medium and let it simmer for 20 minutes, stirring occasionally.
- Finishing Touch: Once the pasta is cooked and the dish is creamy, sprinkle cheddar cheese over the top. Stir until the cheese is completely melted and combined.
- Serve Hot: Serve immediately while hot and enjoy your creation!
Notes
Feel free to swap the bell peppers for your favorite veggies, or use chicken thighs for a juicier result. Garnish with fresh cilantro or a squeeze of lime juice for added zest.
