- 1 flatbread (store-bought or homemade)
- 2 boneless, skinless chicken breasts
- 8 oz fresh mozzarella, sliced
- 2 ripe tomatoes, sliced
- 1/4 cup fresh basil leaves
- 2 tbsp balsamic reduction
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Marinate the chicken: In a small bowl, mix olive oil, salt, and pepper. Coat the chicken breasts and let them marinate for about 10 minutes.
- Cook the chicken: Heat a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side until fully cooked. The internal temperature should reach 165°F. Remove from heat and let it rest.
- Prepare your toppings: While the chicken rests, slice the fresh mozzarella and tomatoes.
- Assemble the flatbread: Preheat your oven to 400°F. Once cooled slightly, slice the chicken and distribute evenly over flatbread. Layer on the mozzarella and tomatoes, then sprinkle fresh basil on top.
- Bake: Place the assembled flatbread in the oven for about 10-15 minutes, or until the cheese is melted and bubbly.
- Drizzle and serve: Once out of the oven, drizzle with balsamic reduction and enjoy!
Notes
For a lighter option, consider swapping the chicken for grilled zucchini. To serve, pair with a fresh arugula salad and chilled white wine.
