Ingredients

  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 2 medium avocados
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the chicken: Drizzle olive oil over both chicken breasts, rubbing it in evenly.
  3. Season the chicken: Sprinkle garlic powder, onion powder, paprika, ground cumin, salt, and black pepper on both sides of the chicken breasts.
  4. Massage to ensure the chicken is fully coated.
  5. Bake the chicken: Place on a lined baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Prepare the avocado: While the chicken bakes, slice the avocados, scoop out the flesh, and mash it in a bowl with a fork. Stir in lime juice.
  7. Mix ranch dressing and sour cream until smooth.
  8. Shred the chicken: Once baked, let the chicken rest before shredding it into bite-sized pieces.
  9. Warm tortillas in the microwave for 15-20 seconds or on a skillet until pliable.
  10. Assemble burritos: Spread ranch-sour cream mixture on each tortilla. Layer in shredded chicken, mashed avocado, both cheeses, lettuce, tomatoes, and cilantro.
  11. Roll them up: Fold in the sides of the tortilla and roll tightly.
  12. Crisp them (optional): Place seam-side down on a skillet over medium heat for a few minutes to crisp the edges.
  13. Serve warm and enjoy!
