- 2 large chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup ranch dressing
- 1/2 cup sour cream
- 2 medium avocados
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the chicken: Drizzle olive oil over both chicken breasts, rubbing it in evenly.
- Season the chicken: Sprinkle garlic powder, onion powder, paprika, ground cumin, salt, and black pepper on both sides of the chicken breasts.
- Massage to ensure the chicken is fully coated.
- Bake the chicken: Place on a lined baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Prepare the avocado: While the chicken bakes, slice the avocados, scoop out the flesh, and mash it in a bowl with a fork. Stir in lime juice.
- Mix ranch dressing and sour cream until smooth.
- Shred the chicken: Once baked, let the chicken rest before shredding it into bite-sized pieces.
- Warm tortillas in the microwave for 15-20 seconds or on a skillet until pliable.
- Assemble burritos: Spread ranch-sour cream mixture on each tortilla. Layer in shredded chicken, mashed avocado, both cheeses, lettuce, tomatoes, and cilantro.
- Roll them up: Fold in the sides of the tortilla and roll tightly.
- Crisp them (optional): Place seam-side down on a skillet over medium heat for a few minutes to crisp the edges.
- Serve warm and enjoy!
Notes
Store leftovers in an airtight container for up to 2-3 days in the refrigerator. You can also freeze individually wrapped burritos.
