- Combine wet ingredients: Pour the entire can of coconut milk into a mixing bowl. Add 3 tablespoons of maple syrup, lime juice, zest, vanilla extract, and that pinch of salt. Whisk vigorously for about 30 seconds until fully combined.
- Add chia seeds: Sprinkle the chia seeds evenly over the coconut milk mixture. Begin whisking immediately and continue for about one to two minutes. This helps prevent the seeds from clumping.
- The first rest: Let the bowl sit on your counter for about 5 minutes. Come back to give it another good whisk to incorporate any seeds that might have settled.
- Taste and adjust: Take a moment to taste your mixture. Does it need more sweetness? Stir in the extra tablespoon of maple syrup if desired. More zing from lime? Adjust with additional zest or juice.
- Let it set: Cover the bowl with a lid or plastic wrap or divide the mixture into serving jars. Chill in the refrigerator for at least 240 minutes, preferably overnight. Your pudding is ready when thick and spoonable.
- Serve and enjoy: Before serving, give the pudding a gentle stir to fluff it up. Top with sliced fresh fruit, toasted coconut flakes, or fresh mint for that perfect contrast of textures.
