Delightfully soft and chewy cookies with a warm cinnamon flavor, perfect for any occasion.

Ingredients

Scale
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the brown sugar and softened butter until completely smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, baking soda, salt, and ground cinnamon in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Roll the dough into small balls, then coat each one in granulated sugar.
  7. Place the sugar-coated balls on a baking sheet lined with parchment paper, leaving some space in between.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
