Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and salt in a bowl, setting it aside.
- Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Gradually incorporate the flour mixture into the wet ingredients, stirring until just combined.
- Gently fold in the chocolate chips, mocha chips, and chopped dried cherries. Don’t overmix!
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are golden but the centers remain soft.
- Cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
Notes
For an extra chewy texture, underbake slightly. Store in an airtight container at room temperature for up to a week.
