- 1/4 teaspoon salt
- 1 tablespoon brown sugar
Instructions
- Preheat your oven to 325°F (170°C).
- Prepare your pan: Line an 8×8 inch baking pan with parchment paper.
- Prepare the cherries: Pit and cut cherries in half or quarters.
- Mix the cherry filling: Combine pitted cherries, 1 tablespoon of sugar, 2 tablespoons of cornstarch, and fresh lemon juice.
- Prepare the shortbread base: In a large bowl, whisk together flour, 2/3 cup granulated sugar, 3 tablespoons of cornstarch, and 1/4 teaspoon of salt.
- Combine the butter: Drizzle melted butter into the flour mixture and stir until crumbly.
- Form the base: Press a little more than half of the mixture into the lined pan.
- Bake the base: Bake for 15-20 minutes, or until the top appears set.
- Add the cherry filling: Stir the reserved shortbread mixture with the brown sugar and spoon the cherry mixture on top.
- Top with crumbs: Sprinkle the remaining crumb mixture over the cherries.
- Final bake: Bake for an additional 25 minutes until golden.
- Cool completely: Allow bars to cool for 3-4 hours before slicing.
