Description

These fluffy cherry cobbler muffins combine the comforting flavors of a classic cobbler with the easy, grab-and-go joy of a muffin.


Ingredients

  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)

  • 1/3 cup brown sugar (for topping)

  • 1/4 cup cold unsalted butter, diced (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine 1 3/4 cups flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt in a mixing bowl.
  3. Whisk together 1/2 cup milk, 1/3 cup vegetable oil, 1 large egg, and 1 teaspoon vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry mixture and gently stir until just combined.
  5. Fold in 1 cup of pitted cherries carefully.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Mix together 1/2 cup flour, 1/3 cup brown sugar, 1/2 teaspoon cinnamon, and 1/4 cup diced cold butter in another bowl until the mixture resembles crumbs.
  8. Sprinkle the cobbler topping over the muffin batter.
  9. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let cool before serving.
