Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine 1 3/4 cups flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt in a mixing bowl.
- Whisk together 1/2 cup milk, 1/3 cup vegetable oil, 1 large egg, and 1 teaspoon vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry mixture and gently stir until just combined.
- Fold in 1 cup of pitted cherries carefully.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Mix together 1/2 cup flour, 1/3 cup brown sugar, 1/2 teaspoon cinnamon, and 1/4 cup diced cold butter in another bowl until the mixture resembles crumbs.
- Sprinkle the cobbler topping over the muffin batter.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before serving.

Store in an airtight container at room temperature for up to three days or refrigerate for a week. Can be frozen for up to three months.
