- 2 medium zucchinis (about 2 cups shredded)
- 2 large eggs
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded mozzarella cheese (for topping)
- Optional: fresh parsley or basil for garnish
Instructions
- Prepare the zucchini: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Shred the zucchinis and wring out as much liquid as possible using a clean kitchen towel or cheesecloth.
- Make the crust: In a large mixing bowl, combine the shredded zucchini, eggs, ½ cup mozzarella cheese, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Shape and bake: Spread the mixture onto the prepared baking sheet, pressing into a thin, even rectangle. Bake for 20–25 minutes, or until golden brown.
- Add cheese topping: Sprinkle the remaining 1 cup of mozzarella on top and return to the oven for an additional 5–7 minutes, or until the cheese is melted and bubbly.
- Slice and serve: Let cool slightly before slicing into strips. Garnish with fresh herbs and serve with marinara or ranch dipping sauce!
Notes
Squeeze out excess moisture from the zucchini for better texture. You can customize flavors with herbs and spices or use different cheeses.
