Description

A hearty one-pan dish that combines the flavors of taco night with cheesy rice, perfect for busy weeknights or family gatherings.

Ingredients

Scale
  • 1 lb lean ground beef (or turkey)
  • 1 can of beans (black or pinto)
  • 1 cup corn (frozen or canned)
  • 2 cups ready rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup salsa (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the beef: In a large skillet, brown the ground beef over medium heat. Break it apart as it cooks and drain excess fat.
  2. Add seasonings: Stir in the taco seasoning, beans, corn, and salsa (if using) until combined.
  3. Mix in the rice: Add the ready rice to the skillet and fold it in gently.
  4. Let it meld: Cover the skillet and cook for about 5 minutes to allow flavors to meld.
  5. Add the cheese: Sprinkle shredded cheese on top, cover and cook for another 3-4 minutes until melted.
  6. Final touches: Season with salt and pepper to taste before serving hot.

Notes

For a vegetarian option, replace ground beef with extra beans or lentils. Consider adding diced onions or garlic for additional flavor.
