  • ¼ cup chopped green onions or cilantro (for garnish)
  • Optional toppings: diced tomatoes, jalapeños, or avocado slices

Instructions

  1. Preheat the Oven: Start by heating your oven to 425°F (220°C).
  2. Prepare the Potatoes: In a large bowl, toss the cubed potatoes with olive oil, garlic powder, onion powder, smoked paprika, chili powder, cumin, salt, and pepper. Spread them evenly on a parchment-lined baking sheet. Roast for 25-30 minutes, flipping halfway through, until crispy and golden.
  3. Cook the Taco Meat: While the potatoes are roasting, brown the ground beef in a skillet over medium-high heat. Drain any excess fat, then stir in the taco seasoning and water. Let it simmer for about 5 minutes until thickened.
  4. Assemble the Dish: Once the potatoes are done, transfer them to a large oven-safe skillet or casserole dish. Layer the seasoned beef on top, then sprinkle the shredded cheese evenly over everything.
  5. Melt the Cheese: Pop the skillet back into the oven for an additional 5 minutes, just until the cheese is melted and bubbly.
