- 1 cup quinoa
- 2 cups vegetable broth
- 2 cups broccoli florets
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup milk (dairy or non-dairy)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup breadcrumbs (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Rinse the quinoa under cold water to remove bitterness. In a medium pot, combine the rinsed quinoa with vegetable broth. Bring to a boil, then reduce to a simmer. Cover and let it cook for about 15 minutes, or until the quinoa is fluffy.
- Combine the cooked quinoa, broccoli florets, shredded cheese, milk, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Stir until everything is well mixed.
- Transfer the mixture into a greased baking dish. If you like a crunchy topping, sprinkle the breadcrumbs on top.
- Bake for 25-30 minutes, or until the casserole is heated through and the top is golden.
- Let it cool for a few minutes before serving.
