Description

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 2 cups broccoli florets
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse the quinoa under cold water to remove bitterness. In a medium pot, combine the rinsed quinoa with vegetable broth. Bring to a boil, then reduce to a simmer. Cover and let it cook for about 15 minutes, or until the quinoa is fluffy.
  3. Combine the cooked quinoa, broccoli florets, shredded cheese, milk, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Stir until everything is well mixed.
  4. Transfer the mixture into a greased baking dish. If you like a crunchy topping, sprinkle the breadcrumbs on top.
  5. Bake for 25-30 minutes, or until the casserole is heated through and the top is golden.
  6. Let it cool for a few minutes before serving.
