Instructions
- Begin by slicing your chicken breasts lengthwise to create thinner cutlets.
- Season both sides of the chicken with salt and pepper.
- Set up three shallow bowls: one for flour, one for the beaten egg, and one for the panko breadcrumbs mixed with grated Romano cheese.
- Dredge each chicken cutlet in the flour, then dip into the egg, and finally coat with the panko mixture.
- Heat the oil in a large skillet over medium-high heat and add the breaded chicken cutlets. Cook for about 4-5 minutes on each side until golden brown.
- Finish by sprinkling shredded mozzarella cheese on top and allowing it to melt before serving.
