- 1 ripe Avocado
- 2 large Scrambled Eggs
- 1 cup Chili (optional)
Instructions
- Preheat your waffle iron according to manufacturer instructions.
- Whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt in a large bowl until combined.
- Beat the buttermilk, melted butter, and eggs in another bowl until smooth.
- Add the wet ingredients into the dry mix gradually, stirring until just combined—be careful not to overmix!
- Fold in the sharp cheddar cheese and jalapeños until evenly distributed throughout the batter.
- Grease your waffle iron lightly, then pour the appropriate amount of batter onto the hot surface. Cook according to your waffle iron’s instructions, usually about 4-5 minutes until golden brown.
- Remove the waffles once cooked and serve hot, topped with avocado, scrambled eggs, or alongside a bowl of chili.
Notes
