Description

Fluffy cornbread waffles infused with sharp cheddar and a hint of spice from jalapeños, perfect for breakfast or brunch.


Ingredients

  • 1/4 cup Pickled Jalapeños, chopped
  • 2 tbsp Honey (optional)
  • 1 ripe Avocado
  • 2 large Scrambled Eggs
  • 1 cup Chili (optional)

Instructions

  1. Preheat your waffle iron according to manufacturer instructions.
  2. Whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt in a large bowl until combined.
  3. Beat the buttermilk, melted butter, and eggs in another bowl until smooth.
  4. Add the wet ingredients into the dry mix gradually, stirring until just combined—be careful not to overmix!
  5. Fold in the sharp cheddar cheese and jalapeños until evenly distributed throughout the batter.
  6. Grease your waffle iron lightly, then pour the appropriate amount of batter onto the hot surface. Cook according to your waffle iron’s instructions, usually about 4-5 minutes until golden brown.
  7. Remove the waffles once cooked and serve hot, topped with avocado, scrambled eggs, or alongside a bowl of chili.
