Description

Ingredients

  • 1/2 cup grated carrots
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • Optional: Cream cheese frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan to prevent sticking.
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well-combined.
  3. Mix the grated carrots, buttermilk, vegetable oil, egg, and vanilla extract until blended in a separate bowl.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined—be careful not to over-mix!
  5. Fill each donut mold about 2/3 full with the batter for optimal rise during baking.
  6. Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
