Ingredients

  • ½ cup plain yogurt or sour cream
  • ¼ cup freshly squeezed orange juice
  • 1 tbsp orange zest
  • ¾ cup chopped pistachios, lightly toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper for easy removal.
  2. Combine the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cardamom. Set aside.
  3. Cream the butter and sugar: In a large bowl, beat the softened butter with sugar until light and fluffy, about 3 minutes.
  4. Incorporate the eggs: Add the eggs one at a time, beating well after each addition.
  5. Add citrus flavors: Stir in the orange zest and freshly squeezed orange juice, blending well.
  6. Mix dry and wet: Alternately add the dry ingredients and yogurt (or sour cream) to the wet mixture, mixing just until combined.
  7. Fold in pistachios, reserving a few for topping if you wish.
  8. Pour the batter into your prepared loaf pan, smoothing the top. Bake for 45–55 minutes or until a toothpick inserted comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Serve with style: Optionally, top your cake with an orange glaze, candied orange slices, or a dusting of powdered sugar and extra pistachios before serving.

Notes

For the best flavor, try freshly grinding your cardamom. Wrap leftovers in plastic wrap and store at room temperature for up to two days.
