Description

This vibrant dish features juicy chicken breasts and colorful bell peppers, seasoned with aromatic spices for a quick and delicious meal.

Ingredients

Scale
  • 2 chicken breasts
  • 2 bell peppers (1 red, 1 green)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts generously with Cajun seasoning, salt, and pepper.
  3. Add the chicken to the skillet, cooking each side for about 5-7 minutes until golden brown and cooked through.
  4. Remove the chicken from the skillet and set it aside for a moment.
  5. In the same skillet, toss in sliced onions, bell peppers, and minced garlic. Sauté until the veggies are tender and fragrant.
  6. Slice the cooked chicken and return it to the skillet, combining it with the sautéed vegetables.
  7. Serve hot, garnished with a sprinkle of fresh parsley for that pop of color.

Notes

For a healthier twist, substitute chicken with tofu or tempeh. Store leftovers in an airtight container for up to 3 days.
