Ingredients

  • 2 cups ripe cherry tomatoes, halved
  • 8 oz fresh burrata cheese
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Fill a large pot with salted water and bring it to a boil. Add the spaghetti, cooking according to package instructions until al dente. Once cooked, drain and set it aside.
  2. Sauté cherry tomatoes: In a skillet over medium heat, pour in the extra virgin olive oil and add the minced garlic. Sauté for about a minute until fragrant, then toss in the halved cherry tomatoes. Cook for 5-7 minutes until they start to burst.
  3. Season tomatoes: As the tomatoes cook, sprinkle them with salt and pepper, stirring occasionally until they soften beautifully.
  4. Combine: Gently add the drained pasta to the skillet with the tomatoes, tossing everything together to ensure the spaghetti is well coated.
  5. Add burrata: Tear the burrata into generous pieces and fold it into the pasta mixture, allowing it to melt slightly into the warm ingredients.
