- 8 oz spaghetti
- 2 cups ripe cherry tomatoes, halved
- 8 oz fresh burrata cheese
- 1/4 cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook the pasta: Fill a large pot with salted water and bring it to a boil. Add the spaghetti, cooking according to package instructions until al dente. Once cooked, drain and set it aside.
- Sauté cherry tomatoes: In a skillet over medium heat, pour in the extra virgin olive oil and add the minced garlic. Sauté for about a minute until fragrant, then toss in the halved cherry tomatoes. Cook for 5-7 minutes until they start to burst.
- Season tomatoes: As the tomatoes cook, sprinkle them with salt and pepper, stirring occasionally until they soften beautifully.
- Combine: Gently add the drained pasta to the skillet with the tomatoes, tossing everything together to ensure the spaghetti is well coated.
- Add burrata: Tear the burrata into generous pieces and fold it into the pasta mixture, allowing it to melt slightly into the warm ingredients.
- Garnish & serve: Top your creation with the fresh basil and serve immediately while it’s still warm and delightful!
