- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheese (Cheddar or mozzarella)
- 8 small flour tortillas
- 1/2 cup blue cheese or ranch dressing (for dipping)
- Oil for frying (vegetable or canola)
Instructions
- Mix the cooked shredded chicken with buffalo sauce and shredded cheese in a bowl.
- Lay out a tortilla and place a generous portion of the chicken mixture in the center.
- Roll the tortilla tightly around the filling, tucking in the sides as you go.
- Heat oil in a skillet over medium heat until hot.
- Fry the taquitos in batches for about 2-3 minutes on each side, or until crispy and golden brown.
- Once done, remove them from the oil and let them drain on paper towels.
- Serve immediately with blue cheese or ranch dressing for dipping.
Notes
For a healthier option, consider baking the taquitos at 425°F for 15-20 minutes instead of frying.
