- 1 cup brown sugar
- 1/4 cup all-purpose flour
- 1 teaspoon cinnamon
- For the glaze:
- 2 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- Prepare the dry mix: In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
- Cream the butter and sugar: In a large bowl, beat together the softened butter and brown sugar until the mixture is creamy and smooth. Add the egg and vanilla, mixing until fully incorporated.
- Combine mixtures: Gradually add the dry ingredients to the butter mixture, mixing just until combined.
- Make the filling: In a small bowl, stir together the filling ingredients: brown sugar, flour, and cinnamon. This mixture should resemble a crumbly texture.
- Assemble the cookies: Roll out the cookie dough on a floured surface and cut it into rectangles. On half of the rectangles, place a generous spoonful of filling. Top with another rectangle and press the edges together to seal.
- Bake: Place the assembled cookies on the prepared baking sheet and bake for 12-15 minutes, or until they turn golden brown.
- Prepare the glaze: In a mixing bowl, whisk together the powdered sugar, milk, and vanilla until smooth and pourable.
- Finish it off: Once the cookies are cool, drizzle them with the glaze for an extra touch of sweetness.
Notes
Feel free to use light or dark brown sugar based on your preference for flavor. A pinch of nutmeg in the filling can add an interesting twist!
