Description

Ingredients

  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 3 large eggs
  • ½ cup unsalted butter, softened
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 cups diced apples (approximately 2 medium apples)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your bundt pan thoroughly to prevent sticking.
  2. Cream the softened butter, brown sugar, and granulated sugar together until the mixture is light and fluffy.
  3. Beat in the eggs one-by-one, mixing well after each addition. Then, stir in the vanilla extract.
  4. Whisk together the all-purpose flour, baking powder, and ground cinnamon in a separate bowl.
  5. Add the dry mixture to the wet ingredients, alternating with the diced apples. Start and end with the flour mixture, and mix just until combined.
  6. Pour the batter into the prepared bundt pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  9. For an optional glaze, whisk together ½ cup powdered sugar, 2 tablespoons brown sugar, and 1-2 teaspoons of milk until smooth. Drizzle it over the cooled cake before serving.

For a twist, you can substitute granulated sugar with coconut sugar or swap in different types of apples like Granny Smith.
