Description

A delightful dish that brings together the savory flavors of chicken with the tangy sweetness of Catalina dressing, perfect for busy weeknights or special occasions.


Ingredients

  • 4 chicken thighs or breasts
  • 1 cup Catalina dressing
  • 1/2 cup onion, chopped
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the chicken on both sides until they’re golden and cooked on the outside.
  3. Combine the Catalina dressing, chopped onion, ketchup, brown sugar, and vinegar in a mixing bowl until well blended.
  4. Place the browned chicken in a baking dish and pour the sauce over the top, ensuring each piece is nicely coated.
  5. Cover the dish with aluminum foil, and bake it in the oven for 1 hour or until the chicken is fully cooked.
  6. Remove the foil for the last 15 minutes to allow the sauce to thicken and develop a glaze.
  7. Serve warm, ideally alongside rice or steamed vegetables.

Notes

For added flavor, consider marinating the chicken in Catalina dressing for a few hours before cooking.
