- 4 chicken thighs or breasts
- 1 cup Catalina dressing
- 1/2 cup onion, chopped
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1/4 cup vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the chicken on both sides until they’re golden and cooked on the outside.
- Combine the Catalina dressing, chopped onion, ketchup, brown sugar, and vinegar in a mixing bowl until well blended.
- Place the browned chicken in a baking dish and pour the sauce over the top, ensuring each piece is nicely coated.
- Cover the dish with aluminum foil, and bake it in the oven for 1 hour or until the chicken is fully cooked.
- Remove the foil for the last 15 minutes to allow the sauce to thicken and develop a glaze.
- Serve warm, ideally alongside rice or steamed vegetables.
