- 2 cups chicken, diced
- 4 cups bok choy, chopped
- 2 carrots, sliced
- 1 onion, diced
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- Salt and pepper to taste
- 1 tablespoon soy sauce (optional)
- 1 tablespoon sesame oil (optional)
- Green onions for garnish (optional)
Instructions
- Heat the sesame oil in a large pot over medium heat.
- Add the diced onions and minced garlic, sautéing until they become translucent and fragrant.
- Toss in the diced chicken, cooking until it’s browned on all sides.
- Stir in the sliced carrots, cooking for another 2 minutes to soften them slightly.
- Pour in the chicken broth and bring the mixture to a simmer.
- Add the chopped bok choy, grated ginger, soy sauce, salt, and pepper.
- Let it simmer for about 10-15 minutes until the chicken is fully cooked and the vegetables are tender.
- Serve hot, garnished with chopped green onions if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. This soup can also be frozen for up to 2 months.
