Ingredients

  • 1 cup fresh or frozen blueberries
  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the cottage cheese, oats, your choice of sweetener, vanilla extract, cinnamon, eggs, baking powder, and a pinch of salt until everything is well combined.
  3. Fold in the blueberries, taking care not to break them.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake for 30-35 minutes, or until the bake is set and has a slight golden hue on top.
  6. Allow it to cool slightly before slicing and serving.
