Delightful cupcakes combining the tartness of fresh blackberries with bourbon, topped with vanilla buttercream.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup blackberries
- 2 tablespoons bourbon
- 1/4 cup fresh mint leaves
- 1 cup vanilla buttercream (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- Cream the softened butter and sugar together in a mixing bowl.
- Add the eggs, one at a time, mixing well after each addition. Don’t forget the vanilla extract!
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually combine the dry ingredients with the wet mixture, alternating with the milk. You want a smooth batter.
- Scoop the batter into the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cupcakes before moving on to the filling.
- In a saucepan, combine blackberries, bourbon, and mint. Cook over medium heat until the blackberries break down.
- Strain the mixture to remove seeds and let it cool.
- Once cooled, use a knife or cupcake corer to hollow out a bit of each cupcake and fill with the blackberry mixture.
- Top each cupcake generously with vanilla buttercream.
- Serve them up and watch your guests light up with joy!
Notes
Garnish with fresh mint leaves or a sprinkle of powdered sugar for an extra touch. Store leftovers in an airtight container in the refrigerator for up to 3 days.
