Description

Delightful cupcakes combining the tartness of fresh blackberries with bourbon, topped with vanilla buttercream.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup blackberries
  • 2 tablespoons bourbon
  • 1/4 cup fresh mint leaves
  • 1 cup vanilla buttercream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream the softened butter and sugar together in a mixing bowl.
  3. Add the eggs, one at a time, mixing well after each addition. Don’t forget the vanilla extract!
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually combine the dry ingredients with the wet mixture, alternating with the milk. You want a smooth batter.
  6. Scoop the batter into the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cupcakes before moving on to the filling.
  9. In a saucepan, combine blackberries, bourbon, and mint. Cook over medium heat until the blackberries break down.
  10. Strain the mixture to remove seeds and let it cool.
  11. Once cooled, use a knife or cupcake corer to hollow out a bit of each cupcake and fill with the blackberry mixture.
  12. Top each cupcake generously with vanilla buttercream.
  13. Serve them up and watch your guests light up with joy!

Notes

Garnish with fresh mint leaves or a sprinkle of powdered sugar for an extra touch. Store leftovers in an airtight container in the refrigerator for up to 3 days.
