Description

Ingredients

  • 4 medium potatoes
  • 1 onion
  • 6 eggs
  • Salt (to taste)
  • Olive oil

Instructions

  1. Start by peeling and thinly slicing the potatoes and onion.
  2. In a large skillet, heat a generous amount of olive oil over medium heat. Add the sliced potatoes and onion.
  3. Cook the mixture, stirring occasionally, until the potatoes are tender—this usually takes about 15-20 minutes.
  4. While the potatoes are cooking, whisk the eggs in a bowl and add a pinch of salt.
  5. Once the potatoes and onions are done, drain them from the oil and mix them well with the whisked eggs.
  6. Add a little more oil to the skillet, then pour the egg mixture back into the pan.
  7. Cook on low heat until the bottom is set, then carefully flip to cook the other side until golden brown.
  8. Once fully cooked, slide the omelette onto a plate and cut it into wedges. Serve warm.

Notes

Best served with a light salad or crusty bread. Can be stored in the refrigerator for up to three days.
