- 4 medium potatoes
- 1 onion
- 6 eggs
- Salt (to taste)
- Olive oil
Instructions
- Start by peeling and thinly slicing the potatoes and onion.
- In a large skillet, heat a generous amount of olive oil over medium heat. Add the sliced potatoes and onion.
- Cook the mixture, stirring occasionally, until the potatoes are tender—this usually takes about 15-20 minutes.
- While the potatoes are cooking, whisk the eggs in a bowl and add a pinch of salt.
- Once the potatoes and onions are done, drain them from the oil and mix them well with the whisked eggs.
- Add a little more oil to the skillet, then pour the egg mixture back into the pan.
- Cook on low heat until the bottom is set, then carefully flip to cook the other side until golden brown.
- Once fully cooked, slide the omelette onto a plate and cut it into wedges. Serve warm.
Notes
Best served with a light salad or crusty bread. Can be stored in the refrigerator for up to three days.
