Description

A warm dessert with gooey banana filling nestled in a soft, cake-like base, perfect for family gatherings.


Ingredients

  • 5 ripe bananas, sliced
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup self-rising flour
  • 1 cup whole milk
  • ½ cup sugar (for the batter)
  • ½ teaspoon ground nutmeg (optional)
  • Vanilla ice cream (optional for serving)
  • Whipped cream (optional for serving)
  • Chopped pecans or walnuts (optional for serving)
  • Caramel drizzle (optional for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking dish lightly with butter or nonstick spray.
  2. Combine the sliced bananas, sugar, melted butter, vanilla extract, cinnamon, and salt in a large mixing bowl. Mix gently until the bananas are well-coated. Set aside.
  3. Whisk together the self-rising flour, milk, the remaining sugar, and the optional nutmeg in another mixing bowl until just combined. Be careful not to overmix.
  4. Pour the batter evenly into the greased baking dish. Do not stir it once you’ve poured it.
  5. Spoon the banana mixture over the top of the batter, distributing it evenly without mixing it in.
  6. Bake for 45–50 minutes until golden brown and the edges are bubbling.
  7. Let the cobbler rest for about 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

For best results, use perfectly ripe bananas and don’t skip the resting time after baking.
