- 1/2 cup (115g) unsalted butter
- 6 ounces (170g) semi-sweet chocolate, finely chopped
- 1 1/4 cups (250g) light brown sugar, packed
- 3 large eggs + 1 egg yolk, room temperature
- 3 tablespoons vegetable oil
- 1 teaspoon pure vanilla extract
- 1/2 cup (40g) unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup (65g) all-purpose flour, spooned and leveled
- 1 cup (6oz / 170g) semi-sweet chocolate chunks
Instructions
- Preheat the oven to 350°F (175°C) and butter an 8×8 inch baking pan, lining it with parchment paper.
- Melt the butter in a medium saucepot over medium heat.
- Add the chopped chocolate and whisk until smooth; set aside to cool slightly.
- Whip sugar and eggs in a large bowl until pale and dissolved.
- Combine vegetable oil, vanilla, cocoa powder, salt, and the cooled chocolate mixture; whisk until combined.
- Fold in the flour and chocolate chunks, mixing until no dry streaks remain.
- Bake in the prepared pan for 28-32 minutes until a skewer comes out with fudgy crumbs.
- Cool completely in the pan, then lift out using parchment paper to slice.
Notes
For a dairy-free option, substitute coconut oil and dairy-free chocolate.
