Description

Indulge in these unbelievably gooey brownies made with rich semi-sweet chocolate and a hint of vanilla, perfect for any occasion.


Ingredients

  • 1/2 cup (115g) unsalted butter
  • 6 ounces (170g) semi-sweet chocolate, finely chopped
  • 1 1/4 cups (250g) light brown sugar, packed
  • 3 large eggs + 1 egg yolk, room temperature
  • 3 tablespoons vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (40g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup (65g) all-purpose flour, spooned and leveled
  • 1 cup (6oz / 170g) semi-sweet chocolate chunks

Instructions

  1. Preheat the oven to 350°F (175°C) and butter an 8×8 inch baking pan, lining it with parchment paper.
  2. Melt the butter in a medium saucepot over medium heat.
  3. Add the chopped chocolate and whisk until smooth; set aside to cool slightly.
  4. Whip sugar and eggs in a large bowl until pale and dissolved.
  5. Combine vegetable oil, vanilla, cocoa powder, salt, and the cooled chocolate mixture; whisk until combined.
  6. Fold in the flour and chocolate chunks, mixing until no dry streaks remain.
  7. Bake in the prepared pan for 28-32 minutes until a skewer comes out with fudgy crumbs.
  8. Cool completely in the pan, then lift out using parchment paper to slice.

Notes

For a dairy-free option, substitute coconut oil and dairy-free chocolate.
