A delightful combination of savory and sweet, these stuffed sweet potatoes are loaded with barbecue chicken and customizable toppings for a satisfying meal.

- 4–5 medium sweet potatoes
- Olive oil for rubbing
- 1 teaspoon of butter (per potato)
- 2 cups of cooked, shredded chicken breast
- 1/2 – 3/4 cup of your favorite barbecue sauce
- Toppings: chopped red onion, pickled jalapeño peppers, banana peppers, cole slaw, etc.
Instructions
- Preheat your oven to 425°F and line a baking sheet with foil for easy cleanup.
- Scrub the sweet potatoes under running water, then pat them dry with a towel.
- Using a knife, prick each potato several times on all sides to allow steam to escape while baking.
- Drizzle a bit of olive oil on the potatoes and rub it in thoroughly to promote even cooking.
- Place the sweet potatoes on the prepared baking sheet and bake for 40-50 minutes, until they’re soft inside.
- Once baked, carefully cut open each sweet potato. Add about 1 teaspoon of butter to the inside of each potato and fluff the flesh with a fork, mixing in the butter evenly.
- In a mixing bowl, combine your cooked, shredded chicken with your desired amount of barbecue sauce.
- Top each sweet potato with the barbecue chicken and your favorite toppings.
Notes
Feel free to mix and match your toppings based on what you love. For faster prep, consider using rotisserie chicken.
