Description

A delightful combination of banana pudding and tiramisu featuring creamy mascarpone, coffee-soaked ladyfingers, and fresh bananas drizzled with caramel.


Ingredients

  • 8 oz mascarpone cheese
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 cup strong brewed coffee, cooled
  • 1/3 cup caramel syrup, plus more for drizzling
  • 2430 ladyfinger cookies
  • 4 ripe bananas, sliced
  • 1/2 cup chopped pecans or walnuts (optional)
  • Cocoa powder or cinnamon for dusting

Instructions

  1. In a large mixing bowl, whisk together the heavy cream, mascarpone cheese, granulated sugar, vanilla extract, and ground cinnamon until smooth and thick, forming medium peaks.
  2. In a separate shallow dish, combine the cooled coffee with the 1/3 cup of caramel syrup.
  3. One by one, dip each ladyfinger into the coffee mixture quickly, ensuring they are soaked without becoming overly soggy.
  4. Arrange a single layer of soaked ladyfingers at the bottom of a 9×13-inch dish.
  5. Spread half of the mascarpone mixture evenly over the ladyfingers with a spatula.
  6. Layer the sliced bananas on top of the mascarpone mixture.
  7. Add another layer of soaked ladyfingers over the bananas, followed by the remaining mascarpone mixture.
  8. If desired, sprinkle chopped pecans or walnuts on top.
  9. Dust with cocoa powder or cinnamon as you prefer.
  10. Drizzle additional caramel syrup just before serving.
  11. Cover and refrigerate for at least 240 minutes—or overnight—to let the flavors meld beautifully.

Notes

For a dairy-free version, replace heavy cream with coconut cream. Store leftovers for up to three days in the refrigerator.
