Ingredients

Scale
  • 1½ cups mashed bananas (approximately 3 ripe bananas)
  • ½ cup nut butter (such as almond or peanut butter)
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. Combine the mashed bananas and nut butter in a large mixing bowl, mixing until smooth.
  3. Stir in the rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt until thoroughly mixed.
  4. Transfer the mixture to your lined baking pan, smoothing it out into an even layer.
  5. Sprinkle additional chocolate chips on top if desired.
  6. Bake in the preheated oven for 18 to 20 minutes until golden brown and set.
  7. Cool completely in the pan before cutting into bars.

Notes

For optimal sweetness, use ripe bananas with brown spots. You can freeze individual bars for lasting freshness.
