  • 3 ripe bananas, sliced
  • 1 cup brown sugar, packed
  • 1 cup butter, softened and divided
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch cake pan.
  2. Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
  3. Cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredient mixture to the wet mix, alternating with milk until you achieve a smooth batter.
  6. Melt the remaining butter with the brown sugar in a small saucepan over medium heat until it’s bubbly and caramelized.
  7. Pour the caramel mixture into the prepared cake pan and arrange the banana slices evenly on top.
  8. Carefully pour the cake batter over the bananas and use a spatula to smooth the top.
  9. Bake for 35 to 40 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
