- 3 ripe bananas, sliced
- 1 cup brown sugar, packed
- 1 cup butter, softened and divided
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 2 large eggs
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ cup milk
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9-inch cake pan.
- Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
- Cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the dry ingredient mixture to the wet mix, alternating with milk until you achieve a smooth batter.
- Melt the remaining butter with the brown sugar in a small saucepan over medium heat until it’s bubbly and caramelized.
- Pour the caramel mixture into the prepared cake pan and arrange the banana slices evenly on top.
- Carefully pour the cake batter over the bananas and use a spatula to smooth the top.
- Bake for 35 to 40 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Let the cake rest for about 10 minutes before flipping it onto a serving plate.
Notes
Ensure butter is softened but not melted for best results. For added flavor, consider adding a splash of rum to the caramel mixture.
