Ingredients

- 2 blocks (14 oz each) extra-firm tofu, pressed and sliced
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 cup balsamic vinegar
- 3 tablespoons pure maple syrup
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary or thyme, chopped
- A pinch of sea salt
- Fresh arugula or mixed greens for serving
- Cherry tomatoes, halved, for garnish
- Toasted pine nuts (optional)
- Fresh basil leaves for garnish
Instructions
- Press the tofu between clean kitchen towels for about 30 minutes.
- Make the balsamic reduction by combining balsamic vinegar, maple syrup, and garlic in a small saucepan over medium heat. Simmer for 10-15 minutes until reduced by half.
- Slice the pressed tofu into thick slabs.
- Heat the olive oil in a skillet over medium-high heat.
- Season the tofu with salt and pepper and cook in the skillet for 4-5 minutes without moving until golden.
- Flip the tofu and cook for another 4-5 minutes until all sides are crispy.
- Glaze the tofu with the balsamic reduction.
- Serve over greens, topped with cherry tomatoes and pine nuts.
Notes
Pressing the tofu thoroughly is key to achieving crispy edges. Store leftovers in an airtight container and reheat gently.
