- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup bell peppers, chopped (any color)
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup onion, chopped
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Cooked rice, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Combine ketchup, apple cider vinegar, honey, soy sauce, and cornstarch in a large bowl. Mix until smooth.
- Toss chicken pieces with salt, pepper, and vegetable oil until well coated in another bowl.
- Combine the chicken, bell peppers, pineapple, and onion in a baking dish.
- Pour the sweet and sour sauce over the chicken and vegetables, mixing well.
- Bake for 25-30 minutes, or until chicken is cooked through and sauce is bubbling.
- Serve over cooked rice and enjoy!
Notes
For extra flavor, garnish with green onions or sesame seeds. This dish can also be made with different types of protein or vegetables.
