Description

A delightful dish featuring tender chicken, colorful veggies, and a tangy sauce, perfect for any occasion.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup bell peppers, chopped (any color)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup onion, chopped
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine ketchup, apple cider vinegar, honey, soy sauce, and cornstarch in a large bowl. Mix until smooth.
  3. Toss chicken pieces with salt, pepper, and vegetable oil until well coated in another bowl.
  4. Combine the chicken, bell peppers, pineapple, and onion in a baking dish.
  5. Pour the sweet and sour sauce over the chicken and vegetables, mixing well.
  6. Bake for 25-30 minutes, or until chicken is cooked through and sauce is bubbling.
  7. Serve over cooked rice and enjoy!

Notes

For extra flavor, garnish with green onions or sesame seeds. This dish can also be made with different types of protein or vegetables.
