Ingredients

  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Sauté the vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté until they are softened and fragrant.
  2. Combine ingredients: Stir in the shredded chicken along with the cumin, chili powder, salt, and pepper. Cook this mixture until everything is heated through.
  3. Prepare the tortilla: Heat another skillet over medium heat. Place a tortilla in the skillet and sprinkle half of it with your shredded cheese.
  4. Add the filling: Layer the chicken mixture over the cheese, then add a little more cheese on top of the chicken.
  5. Cook the quesadilla: Fold the tortilla in half, pressing down lightly. Cook until it’s golden brown on both sides, and the cheese is perfectly melted.
  6. Repeat: Continue this process with the remaining tortillas and filling.
  7. Serve: Once cooked, cut the quesadillas into wedges and serve warm.
