Description

Delicious bite-sized treats combining apple pie flavors with creamy cheesecake, perfect for any gathering.


Ingredients

  • 1 1/4 cups cinnamon graham crackers
  • 3 tablespoons butter, melted
  • 1/4 cup sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 whole eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 6 tablespoons butter, chilled and cut into small cubes
  • 1/2 cup all-purpose flour
  • 3/4 cup oats
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 2 apples, skinned and diced
  • 2 tablespoons butter, melted
  • 2 tablespoons sugar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix the crushed graham crackers with melted butter and sugar.
  3. Press the mixture into the bottom of mini muffin tins or a baking dish.
  4. Beat the softened cream cheese in a mixing bowl until smooth.
  5. Add in the sugar, eggs, vanilla, and spices, mixing until fully combined.
  6. Melt butter in a skillet over medium heat, then add the diced apples.
  7. Sprinkle sugar, brown sugar, and spices over the apples, cooking until tender.
  8. Combine chilled butter cubes with flour, oats, and sugars in another bowl.
  9. Use a fork to work the mixture until crumbly.
  10. Pour the cheesecake filling over the prepared crusts, then add a layer of cinnamon apples on top.
  11. Sprinkle the streusel evenly over all the bites.
  12. Bake for 25-30 minutes, until set. Let them cool before serving.

Notes

For added presentation, consider a dollop of whipped cream or caramel sauce on serving.
