- 1/4 teaspoon ground cinnamon
- 2 apples, skinned and diced
- 2 tablespoons butter, melted
- 2 tablespoons sugar
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
Instructions
- Preheat your oven to 325°F (163°C).
- Mix the crushed graham crackers with melted butter and sugar.
- Press the mixture into the bottom of mini muffin tins or a baking dish.
- Beat the softened cream cheese in a mixing bowl until smooth.
- Add in the sugar, eggs, vanilla, and spices, mixing until fully combined.
- Melt butter in a skillet over medium heat, then add the diced apples.
- Sprinkle sugar, brown sugar, and spices over the apples, cooking until tender.
- Combine chilled butter cubes with flour, oats, and sugars in another bowl.
- Use a fork to work the mixture until crumbly.
- Pour the cheesecake filling over the prepared crusts, then add a layer of cinnamon apples on top.
- Sprinkle the streusel evenly over all the bites.
- Bake for 25-30 minutes, until set. Let them cool before serving.
Notes
For added presentation, consider a dollop of whipped cream or caramel sauce on serving.
