10 small flour tortillas, cut into strips

2 cups cooked chicken breast, shredded

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 can (4 oz) diced green chilies

1 ½ cups shredded cheddar cheese

1 ½ cups shredded mozzarella cheese

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup sour cream

½ cup chopped fresh cilantro (optional)


Instructions

  • Preheat the oven to 375°F (190°C).
  • Layer the tortillas: In a greased 9×13-inch baking dish, layer half of the tortilla strips.
  • Add the chicken: Spread half of the shredded chicken over the tortillas.
  • Add beans and tomatoes: Top with black beans and diced tomatoes with green chilies.
  • Spices: Sprinkle half of the cumin, chili powder, garlic powder, onion powder, salt, and pepper over the layers.
  • Cheese: Sprinkle 1 cup of shredded cheddar and 1 cup of mozzarella cheese over the mixture.
  • Repeat layers: Add another layer of tortillas, followed by the remaining chicken, black beans, tomatoes, spices, and cheeses.
  • Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  • Finish and serve: Remove from the oven, top with a dollop of sour cream, and garnish with chopped fresh cilantro if desired.

Notes

  • You can use ground beef or turkey instead of chicken if preferred.
  • For a spicier dish, add more diced green chilies or jalapeños.
