2 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes

1/2 cup freshly grated Parmesan cheese

4 cloves garlic, minced

Instructions

  • Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, Italian seasoning, paprika, salt, and pepper. Stir in the grated Parmesan cheese until well combined. The mixture should be thick and aromatic.
  • Marinate the Chicken: Add the cubed chicken pieces into the marinade. Use a spoon or clean hands to coat each piece thoroughly. Cover the bowl and refrigerate for at least 1 hour (or up to 6 hours for deeper flavor infusion).
  • Preheat the Grill: If using a gas or charcoal grill, preheat it to medium-high heat (about 400°F / 200°C). Alternatively, you can use a grill pan or broiler in the oven.
  • Assemble the Skewers: Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking. Do not overcrowd.
  • Grill the Chicken Skewers: Place the skewers on the hot grill. Cook for 10–12 minutes, turning every 2–3 minutes to ensure even grilling on all sides. Brush with leftover marinade during grilling for extra flavor, but only during the first half of the cook time. Chicken is done when it reaches an internal temperature of 165°F (75°C) and has a nice golden-brown crust.
  • Garnish and Serve: Remove the skewers from the grill and rest for 3–5 minutes. Garnish with fresh parsley and a final sprinkle of Parmesan cheese. Serve immediately.
